A renowned chef with two Michelin stars has responded to food safety authorities following his restaurant receiving the lowest rating from the Food Standard Agency. The upscale Ynyshir Restaurant and Rooms in Ceredigion, Wales, known for its nearly £500 per head dining experience, was given a one-star rating by the FSA after an inspection on November 5 last year. This rating indicates the need for significant improvement, contrasting with the restaurant’s prestigious Michelin stars.
The chef patron has dismissed the agency’s assessment, asserting that the restaurant upholds the highest standards globally by offering a unique culinary experience. Gareth Ward, a prominent chef featured on MasterChef: The Professionals, defended his restaurant’s practice of sourcing top-quality raw ingredients from around the world, including sashimi-grade fish from Japan. Inspectors focused on the use of raw ingredients, questioning the quality and aging process of certain items.
Despite the FSA report highlighting areas for improvement in food safety management, cleanliness, and facility conditions, Mr. Ward stands by his restaurant’s unconventional approach. While acknowledging some paperwork discrepancies, he remains unapologetic, emphasizing the creativity and uniqueness of their culinary offerings. Ynyshir, the only Michelin-starred restaurant in Wales, is celebrated for providing a distinctive dining experience curated by Chef Gareth Ward, renowned for his innovative and globally inspired menus.
